Baba Ganouche Sherbet

Basically you freeze homemade baba ganouche, which consists of baked or steamed eggplant, garlic, lemon juice, herbs, chickpeas, and a bit of salt substitute or tamari, blended to a smooth consistency, then frozen overnight. It has the same consistency as ice cream, is nutritious and low calorie, and fairly low cost. I made some last night and had it for breakfast this morning.
